For the Mango Salsa

  • 1/4 cup cilantro chopped
  • 1 lime lime juiced
  • 1 pinch salt
For the Lime-Chili Sauce
  • 1/4 cup mayonnaise or Greek yogurt for creaminess
  • 1 lime lime juice freshly squeezed

Method
 

Preparation Steps
  1. Dice mango, cherry tomatoes, and red onion. Combine with cilantro, lime juice, and salt in a bowl. Let sit for 10 minutes.
  2. Whisk olive oil, lime juice, chili powder, garlic powder, and salt in a bowl. Add shrimp and marinate for 15 minutes.
  3. Heat skillet over medium-high heat. Cook shrimp for 2-3 minutes on each side until cooked through, around 4-6 minutes total.
  4. Mix mayonnaise or yogurt, lime juice, and chili powder in a bowl. Add water as needed to reach desired consistency.
  5. Assemble bowls with rice as a base, topped with avocado slices, mango salsa, grilled shrimp, and lime-chili sauce.
