- Preheat your oven to 325°F (165°C). Season the beef roast with salt and pepper, letting it sit at room temperature for about 30 minutes.
- In a skillet, heat oil over medium-high heat. Sear the seasoned beef roast on all sides for about 3-4 minutes until golden-brown.
- Remove the beef and add onions and garlic to the skillet. Sauté for 5 minutes before mixing in cranberry sauce and balsamic vinegar. Simmer for 2-3 minutes.
- Place the seared beef in a roasting pan, pour the glaze over it, and cover tightly with aluminum foil.
