  • 2 pieces boneless chicken breasts or tofu/chickpeas for vegetarian option
  • 1 tablespoon olive oil can substitute any cooking oil
For the Street Corn Mix
  • 2-3 ears corn fresh or frozen preferred
  • 1/4 cup mayonnaise Greek yogurt for a healthier option
  • 1/4 cup sour cream omit or use dairy-free
  • 1 lime lime juice fresh preferred
  • 1 teaspoon chili powder adjust to preference
  • 1/4 cup cotija cheese or crumbled feta
Optional Garnishes
  • 1/4 cup fresh cilantro optional but recommended
  • 1 medium avocado sliced
  • pickled jalapeños to taste

Method
 

Cooking Instructions
  1. Cook the Rice: Boil 2 cups of water, add rice and salt, reduce heat and simmer for 15-18 minutes. Fluff and set aside.
  2. Prepare the Chicken: Mix chili powder, garlic powder, cumin, and salt. Coat chicken in olive oil and rub spice mix. Marinate for 5-10 minutes.
  3. Grill the Chicken: Preheat grill. Cook chicken for 6-7 minutes on each side until cooked through. Let it rest, then slice.
  4. Grill the Corn: Grill corn for 8-10 minutes until charred. Remove and cut kernels off the cob.
  5. Make the Street Corn Mix: Combine mayonnaise, sour cream, lime juice, chili powder, and cotija cheese in a bowl. Stir in corn.
  6. Assemble the Bowls: Layer rice in bowls, top with street corn mix and sliced chicken.
  7. Garnish and Serve: Add cilantro, lime slices, and optional toppings like avocado or pickled jalapeños.
