Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Carefully slice each salmon fillet lengthwise to create a pocket for stuffing.
  3. Drizzle olive oil over the salmon fillets and season with salt and pepper.
  4. Sauté spinach in olive oil, adding Italian seasoning, paprika, cayenne, and seasoned salt until wilted.
  5. Transfer sautéed spinach to a bowl and mix in chopped roasted red peppers, crumbled feta, and grated Parmesan.
  6. Stuff each salmon pocket with the spinach and feta mixture evenly.
  7. Place the stuffed salmon on the baking sheet and bake for 12-17 minutes until done.
  8. Allow to rest for a few moments before serving to enhance flavors.
