- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with aluminum foil, lightly sprayed with cooking spray.
- Melt 1 cup of butter in a microwave-safe bowl for about 1 minute, let cool slightly.
- Add ½ cup granulated sugar, ½ cup light brown sugar, and 1 teaspoon vanilla extract to the melted butter and mix until smooth.
- Stir in 1 ½ cups all-purpose flour, 1 ½ cups rolled oats, and a pinch of salt until crumbly, reserving 1 cup for topping.
- Press the majority of dough into the bottom of the prepared pan.
- Spread an even layer of raspberry preserves over the crust.
- Sprinkle the reserved crumb mixture over the raspberry preserves.
- Bake for about 30 minutes until edges are set and top is golden.
- Cool at room temperature for at least 2 hours before slicing.
