Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with aluminum foil, lightly sprayed with cooking spray.
  2. Melt 1 cup of butter in a microwave-safe bowl for about 1 minute, let cool slightly.
  3. Add ½ cup granulated sugar, ½ cup light brown sugar, and 1 teaspoon vanilla extract to the melted butter and mix until smooth.
  4. Stir in 1 ½ cups all-purpose flour, 1 ½ cups rolled oats, and a pinch of salt until crumbly, reserving 1 cup for topping.
  5. Press the majority of dough into the bottom of the prepared pan.
  6. Spread an even layer of raspberry preserves over the crust.
  7. Sprinkle the reserved crumb mixture over the raspberry preserves.
