  • 0.5 cup Water
For the Base
  • 4 6-inch Flour Tortillas or corn tortillas for gluten-free
For the Layers
  • 1 can Refried Beans canned or homemade
  • 0.5 cup Enchilada Sauce or Mild Taco Sauce
  • 2 cups Shredded Mexican Cheese Blend or substitutes like cheddar or Monterey Jack
For the Fresh Toppings
  • 1 cup Diced Tomatoes
  • 1/4 cup Sliced Green Onions
  • 1 cup Sliced Black Olives optional
For Cooking
  • 2 tablespoons Oil for frying tortillas

Equipment

  • Skillet
  • saucepan
  • Frying Pan
  • oven
  • baking sheet

Method

Step-by-Step Instructions
  1. Heat a skillet over medium-high heat and add the ground beef (or turkey). Cook for about 5-7 minutes, breaking it apart until browned. Drain fat, stir in taco seasoning and a splash of water, simmer until thickened.
  2. In a small saucepan, heat refried beans over low heat, adding water until spreadable. Stir continuously for 3-5 minutes until warm and smooth.
  3. For crispy tortillas, heat oil in a frying pan over medium heat. Fry each tortilla for about 30 seconds on each side until golden brown. Alternatively, bake at 375°F (190°C) for 8-10 minutes.
  4. On one tortilla, spread a layer of refried beans, then add the seasoned meat mixture. Place a second tortilla on top, drizzle with sauce, and sprinkle cheese. Add toppings as desired.
  5. Preheat oven to 400°F (200°C). Place assembled pizzas on a baking sheet and bake for 8-10 minutes or until cheese is melted and bubbly.
  6. Remove from oven, let cool for a minute, slice into quarters and serve hot.
