  • 1 pound Boneless Skinless Chicken Thighs
For the Teriyaki Sauce
  • 2 tablespoons Cornstarch
  • 1/2 cup Water to dissolve cornstarch
  • 1/2 cup Soy Sauce opt for low sodium
  • 1/4 cup Brown Sugar light or dark
  • 2 cloves Garlic Cloves freshly minced
  • 2 tablespoons Rice Vinegar white wine vinegar can be substituted
  • 1 tablespoon Fresh Ginger or ground ginger
  • 1 tablespoon Honey optional
  • 1 tablespoon Sesame Oil high-quality recommended
For Grilling
  • 6 pieces Skewers soak wooden skewers in water
For Optional Toppings
  • 1 tablespoon Sesame Seeds for garnish
  • 2 tablespoons Chopped Green Onion for garnish

Method
 

Step‑by‑Step Instructions
  1. Make the Teriyaki Sauce: In a medium saucepan, combine cornstarch with water, stirring until smooth. Add soy sauce, brown sugar, minced garlic, rice vinegar, fresh ginger, honey, and sesame oil. Cook over medium heat for 5-10 minutes until thickened, then remove from heat and let cool.
  2. Marinate the Chicken: Cube the chicken thighs or breasts and place them in a ziplock bag. Pour half of the cooled teriyaki sauce over the chicken, seal the bag, shake gently, and refrigerate for at least 30 minutes.
  3. Preheat the Grill: Heat the grill to medium heat, approximately 350°F, for 10 minutes before grilling.
  4. Skewer & Grill the Chicken: Thread the marinated chicken onto soaked skewers, lightly oil the grill grates, and place skewers on the grill. Cook for 20-30 minutes, turning every 3-4 minutes until chicken reaches an internal temperature of 165°F.
  5. Baste & Serve: Brush the skewers with reserved teriyaki sauce in the last few minutes of grilling for added flavor. Garnish with sesame seeds and chopped green onions before serving.

Notes
