Preparation Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and prep your workspace for a smooth cooking experience.
  2. Slice the red bell peppers into quarters and place them in a mixing bowl. Drizzle with olive oil, then sprinkle salt and pepper over the top. Toss well to combine and spread on a baking sheet. Roast in the oven for about 20 minutes.
  3. Once the roasted peppers have cooled, transfer them to a blender. Add the minced garlic and lemon juice. Blend until smooth and creamy.
  4. In a skillet, heat a tablespoon of olive oil over medium heat. Season tilapia fillets with salt and pepper. Cook each fillet for 3-4 minutes per side until golden and flaky.
  5. Pour the roasted pepper sauce over the tilapia in the skillet. Reduce heat to low and let simmer for 1-2 minutes. Serve hot, garnished with fresh herbs if desired.
