  • 2 cups Cherry Tomatoes Ripe and fresh, halved
  • 1 medium Red Onion Thinly sliced
  • 1 jar (12 oz) Marinated Artichoke Hearts Strained from liquid
  • 1 can (15 oz) Chickpeas Rinsed and dried
  • 1/2 cup Fresh Basil Cut into thin strips
  • 1/4 cup Fresh Chives Finely diced
  • 1 Tbsp Capers Drained
For the Dressing
  • 3 Tbsp Olive Oil Extra virgin recommended
  • 2 Tbsp Red Wine Vinegar Adjust to taste
  • 1 tsp Dried Parsley Fresh is preferable if available
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Wash and halve the cherry tomatoes, thinly slice the red onion, cut basil leaves into strips, and finely chop chives.
  2. Strain the marinated artichoke hearts and rinse them under cold water, then pat dry.
  3. Rinse the chickpeas under cool water and pat them dry.
  4. In a bowl, whisk together olive oil, red wine vinegar, dried parsley, salt, and pepper.
  5. In a large bowl, combine cherry tomatoes, red onion, artichokes, chickpeas, basil, chives, and capers, then toss with the dressing.
  6. Serve immediately or chill in the refrigerator for 1-2 hours before serving.
