Step-by-Step Instructions
  1. Heat a tablespoon of olive oil in a large skillet over medium-low heat. Season the salmon fillets with red pepper flakes, paprika, Italian seasoning, and salt. Cook for about 5 minutes on each side until golden brown and flakes easily. Remove and set aside.
  2. In the same skillet, add more olive oil or a dab of butter. Add minced garlic and chopped onion, sauté for 2-3 minutes until the onion is soft and garlic is fragrant.
  3. Stir in the chopped tomatoes, fresh basil, and spinach. Pour in the stock and let it simmer for 3-5 minutes until the spinach wilts and tomatoes soften.
  4. Gently return the salmon to the skillet, letting it absorb the sauce for one minute. Drizzle olive oil over the top before serving.
  5. Serve immediately with your favorite side dishes like steamed veggies, rice, or light pasta.
