  • 1/4 cup cilantro & lime Lemon can be used instead of lime.
  • 1 cup tortilla strips Substitution: crispy chickpeas

Instructions
  1. Start by heating a non-stick skillet over medium-high heat. Add the protein and cook for 5-7 minutes until browned and crumbly.
  2. Mix in the taco spices and 1/3 cup of water. Reduce heat and let it simmer for 2-3 minutes.
  3. Prepare fresh toppings by dicing tomatoes, shredding lettuce, and slicing onions.
  4. Cook rice according to package instructions (15-20 minutes). Fluff the rice once cooked.
  5. Assemble the bowl with rice as the base, followed by the seasoned protein mix, fresh veggies, and cheese.
  6. Finish with fresh cilantro and lime juice for a burst of flavor.
