For the Shrimp
  • 1 pound peeled and deveined shrimp
  • 2 tablespoons olive oil for marinating
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1 tablespoon lime juice fresh
For the Creamy Sauce
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • to taste hot sauce optional
For Serving
  • 1 large avocado sliced
  • 1 lime lime wedges for serving

Method
 

Preparation Steps
  1. In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, and cayenne pepper. Toss shrimp to coat and marinate for 15 minutes.
  2. In a medium bowl, combine corn, cherry tomatoes, red onion, jalapeño, cilantro, lime juice, salt, and pepper. Mix and set aside.
  3. In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, and hot sauce until smooth.
  4. Preheat grill to medium-high heat. Thread shrimp onto skewers and grill for 2-3 minutes per side.
  5. Prepare bowls with cooked rice, then top with grilled shrimp, corn salsa, and sliced avocado.
  6. Drizzle creamy sauce over each bowl and garnish with lime wedges.
