- In a blender, combine cottage cheese, eggs, garlic powder, salt, black pepper, and Italian herb mix. Blend until smooth and creamy, about 1-2 minutes.
- Preheat the oven to 350°F (180°C).
- Line a baking sheet with parchment paper. Pour the blended mixture onto the parchment and spread it into a thin, round shape about 1/4 inch thick.
- Bake in the preheated oven for 30 minutes, or until golden brown at the edges.
- Increase the oven temperature to 400°F (200°C). Spread pizza sauce over the baked flatbread, add grated cheese, and your choice of toppings.
- Return to the oven and bake for an additional 8-10 minutes until the cheese melts and bubbles.
- Remove from the oven and let cool for a minute before slicing. Serve hot.
