Step-by-Step Instructions
  1. Prepare the Filling: In a mixing bowl, combine crawfish or shrimp, diced andouille sausage, cheddar cheese, red bell pepper, red onion, cooked rice, Cajun seasoning, and parsley. Mix thoroughly and let sit for 10 minutes.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper in a diamond shape. Place 2-3 tablespoons of filling at the bottom corner, fold up the corner, fold in the sides, and roll tightly, sealing with water.
  3. Heat the Oil: In a deep skillet, pour about 2 inches of vegetable oil and heat to 350°F (175°C) for perfect frying.
  4. Fry the Egg Rolls: Place assembled rolls seam-side down in hot oil. Fry for 2-3 minutes on each side until golden brown.
  5. Drain and Serve: Remove from oil and drain on a paper towel-lined plate. Serve warm with your choice of dipping sauces.
