  2. In a medium bowl, whisk together the sugar, sesame seeds, crushed garlic, and chopped green onion. Slowly add soy sauce (or coconut aminos), rice vinegar, chili oil, and sesame oil. Mix well.
  3. Cut off the ends of each cucumber and slice using chopsticks to prevent cutting through. Make diagonal cuts followed by straight cuts to create spiral shapes.
