Ingredients
  

For the Pasta
  • 8 ounces Pasta Any shape, gluten-free options available.
For the Dressing
  • 1 cup Vegan Yogurt Brands like Forager Project or Silk’s Soy are excellent choices.
  • 1 each Lemon Use fresh juice and zest.
  • 1 tablespoon Miso Paste Or swap with nutritional yeast.
  • 2 cloves Garlic Blend of raw and roasted garlic preferred.
For the Vegetables
  • 1 medium Zucchini Can use summer squash as a substitute.
  • 1 each Red Onion Yellow onions or shallots work well too.
  • 4 cups Spinach Swap in arugula for a peppery kick.
  • 1 cup Artichoke Hearts Marinated preferred, sun-dried tomatoes are a substitute.
For the Herbs
  • 1 cup Basil Fresh basil preferred, mix in other herbs if desired.
  • 1/4 cup Parsley Can replace with cilantro for variation.

Method
 

Cooking Instructions
  1. Slice the zucchini into half-moons, sprinkle with salt, and let sit for 5-10 minutes. Pat dry before cooking.
  2. In a pot, bring salted water to a boil, cook pasta until al dente (8-10 min), drain, and rinse under cold water. Combine with fresh spinach and artichoke hearts.
  3. In a skillet, heat olive oil over medium, sauté red onion with salt for 5-7 minutes until translucent, then transfer to pasta bowl.
  4. In the same skillet, sauté zucchini and cut sides of lemon for 3-6 minutes until caramelized, then add to mixing bowl.
  5. Blend fresh basil, parsley, lemon zest, garlic, pepitas, vegan yogurt, miso, oil, lemon juice, and salt until smooth.
  6. Pour half of the dressing over pasta mixture, toss to combine, and adjust dressing to taste.
