Preparation Steps
  1. Prepare the Baking Surface by lining a large baking sheet with parchment paper.
  2. Mix the Wet Ingredients by combining cashew butter, lemon juice, maple syrup, lemon zest, and vanilla extract until smooth.
  3. Add the Dry Ingredients by stirring in almond flour, protein powder, and poppy seeds until a thick batter forms.
  4. Chill the Mixture in the refrigerator for about 30 minutes to firm up.
  5. Roll into Balls by scooping about 1 tablespoon of mixture and rolling into 1-inch balls.
  6. Coat with Coconut by rolling the balls in shredded coconut until coated.
  7. Drizzle with Coconut Butter by melting it and drizzling over the top of each ball.
  8. Freeze and Enjoy by placing the baking sheet in the freezer for about 10 minutes to set.
