  • 4 cups Diced Rhubarb Fresh or thawed frozen rhubarb.

Preparation Steps
  1. Preheat your oven to 325°F (163°C) and grease a 9x13 inch baking pan.
  2. Combine 2 cups of all-purpose flour with 0.5 cups of powdered sugar in a large mixing bowl.
  3. Cut in 1 cup of cold, cubed butter until the mixture resembles coarse crumbs.
  4. Press the crumb mixture into the baking pan and bake for 15 minutes until just set.
  5. In the same bowl, whisk 4 large eggs until lightly beaten. Stir in 2 cups of granulated sugar, 0.5 cups of all-purpose flour, 1 teaspoon of salt, and ground cinnamon if desired.
  6. Fold in 4 cups of diced rhubarb and pour this mixture over the pre-baked crust.
  7. Bake for an additional 60 minutes until set and lightly golden on top.
  8. Cool completely in the pan before slicing into squares.
